RECIPE: CARROT PUDDING

Carrot Pudding

Gary’s mom, Felicia, is a great cook. Every Christmas, the family can’t wait for her to bring out her carrot pudding. It’s more like a cake, less like a pudding. You have to act quick with this one because before you know it, the bowl is empty. Hope you family enjoys it as much as our does.

Ingredients:

1/2 cup of butter
1/2 cup of brown sugar
1 1/2 tbs cold water
2 eggs
3/4 tsp salt
1 1/2 tsp baking power
3/4 tsp nutmet
3 cups grated carrots ( 1 1/2 pounds)

Steps:

1. Boil carrots – then grate or mash them
2. Cream butter with sugar, add water and eggs
3. Add flour, soda, salt, baking powder, nutmeg and carrots
4. Bake in 350 degree oven about one hour in buttered casserole.
